Handcrafted in Seki City, Japan, the Enso HD Nakiri Knife is a Japanese-style vegetable knife with a straight edge, designed for cutting through a wide variety of fresh vegetables. This knife is part of the Enso line of professional knives, which combine the best of advanced technology with the unsurpassed knowledge and expertise of traditional craftsmen.

Enso continues to pursue new possibilities for kitchen knives in the new era, working on maintaining and improving manufacturing technologies to produce the highest quality products. The Enso HD blades are constructed of 37-layer stainless steel Damascus with a VG-10 steel cutting core, providing excellent edge retention. Each blade is heat-treated to a 61 on the Rockwell scale and hand-ground to a 12-degree cutting angle, with a hammered or sashimi finish.

All Enso HD knives feature a black canvas micarta handle with three stainless steel rivets, bolster, and end cap. The enclosed full tang handle construction is seamless, ensuring strength, durability, and balance. The double-bevel (50/50) edge is suitable for both right and left-handed use, with a machine-pressed blade kanji. The first two Japanese characters of the kanji are "Enso," which means "Harmony" in Japanese, and the last three characters are "Nippon Sei," meaning "Made in Japan."

Enso knives are crafted in Seki City, Japan, one of the most renowned sword-making cities in the country. Seki is a city rich with history and cultural tradition, and the incredible quality of knives produced there is founded on the technology and beliefs of the ancient Seki sword smiths. Today's Seki knifemakers combine knowledge, craft, and tradition to develop the highest quality knives, designed to fit a variety of purposes and lifestyles.
